Lambrusco di Sorbara DOP, made according to the ancestrale method, i.e. the second fermentation took place in the bottle as with the champagne method, but no disgorgement was carried out. With this old manufacturing method, Lambruscos were manufactured before the introduction of pressure tanks (autoclaves). Thus, the yeast remains as a sediment. The aromas are perceived somewhat more intensely. A pleasure to try.
